Dijon Salmon with Roasted Fennel

Ingredients
6 6oz salmon filets
6 tablespoons Dijon mustard
2 tablespoons Grape seed oil
1 tablespoon olive oil
Salt and pepper to taste
2 fennel bulbs sliced thin
Heat medium saute pan on medium hi heat. Add grape seed oil and sear one side of salmon. Flip over in pan take off heat and rub each piece of salmon with Dijon mustard season with salt and pepper finish baking in 400 degree oven for 4 to 5 minutes or until preferred doneness.
Toss thin sliced fennel in olive oil, salt and pepper and place in piece of tin foil and close so heat cannot escape when roasting. Place on sheet pan and roast in 350 degree oven for 25 minutes.
